Tonite after lesson, I am feeling hungry so decide to look for place to makan.
Open kitchen here where you can watch those handsome cooks hard at work. It is not a big place , with a long common table in centre, a couple of small tables by the wall. Together with counter, it can seat about 33 people.
A simple and thin menu, just 3 types of ramen dishes : Original, Black Spicy and Green Spicy.
What’s so special about this place is that it offers chicken broth ramen ( “Tori” means chicken in Japanese ). The broth is made by boiling chicken parts (bones & feet) with kombu ( a type of seaweed) from Hokkaido, following by stewing and lastly reducing. The whole process takes about 8 to 9 hours.
For Black Spicy ramen, it is topped with a paste made with toasted Szechuan peppercorn and garlic in oil.
For Green Spicy ramen, it is topped with a creamy wasabi sauce.
Marking my order on the order form, which given together with the menu. The form is for marking what type of ramen, the strength of soup base, texture of ramen and option of toppings such as spring onions, deep-fried onions, black fungus, and chicken oil.
Hard boiled eggs available on the table are Free of Charge and free-flow. The white colored eggs are normal eggs, while the brown ones are low cholesterol. The eggs are not 100% firm hard boiled, as the shells tend to stick to the egg white. The white is not firm and has a texture similar to the flavoured egg served in the ramen.
